Food retail and foodservice opererations now have the flexibility to choose from three different cooking modes to maximize equipment efficiency and achieve consistent results.
In convection mode, the oven has a water-injection button, which is ideal for pastries, breads and glazing. Steam mode perfectly steams fish, shellfish, rice, vegetables and meats. In combination mode, the oven controls humidity in the cooking chamber to main-tain the perfect atmosphere for meats, rethermalizing meals and general cooking results.
In addition to delicious results, the Hobart Combi Oven delivers cost-of-ownership benefits in energy and water savings. The boilerless design uses minimal water for maximum results and automatically cuts power usage in half once it has achieved the desired temperature. The Combi Oven even retains heat with superior insulation that ensures heat is kept inside the oven.
