Versatile Combi Oven Helps Schools Deliver Perfectly Prepared Meals

Preparing a consistent meal from day to day is no easy task. Foodservice professionals across the nation are faced with the same challenge of making a wide variety of food. In order to meet this challenge, more and more facilities are turning to combi ovens to help them accomplish their daily tasks.

Because a combi oven functions as a steam, convection and combination oven, foodservice workers have a greater selection of cooking technique options. A combi oven allows for better versatility so the types of food prepared in the oven can range from pastries and bread cooked in the convection mode, to steamed fish and vegetables in the steam mode, to meat and poultry in combination mode. The versatility of the oven makes it perfect for schools, where many types of meals are cooked for both breakfast and lunch.

Katie Rogers, director of foodservice for the Decatur School District in Indiana, has been using the Hobart Combi® Oven for approximately a year and a half. She said, “The combi oven is a great piece of equipment for K through 12 schools. No matter what product you are making, it makes the food taste better, hold longer and look better. We prepare many types of foods that require different levels of moisture, and the combi oven’s settings allow us to change the level of moisture to suit the food. With the oven’s ability to program up to 100 recipes, all we have to do is choose the appropriate one for whatever we are cooking.”

Rogers and her staff work to keep the school’s menu updated, trying new recipes and finding more ways to cook meals using the combi. In addition to providing versatility, combi ovens also offer an efficient way to cook consistent meals for customers who are expecting their food to taste the same every time. The combi allows for multiple fares to be cooked simultaneously, reducing cooking times. Additionally, when cooking across many facilities, or even from day to day in the same facility, and working to achieve a constant taste, the combi oven will help schools achieve consistent results anywhere, everywhere, every time.
